- 3 1/2 pounds Yellow Onions (6-7 medium onions), sliced thinly
- 2 cloves Garlic minced
- 1 teaspoon Fresh Thyme leaves
- 1/4 cup Sweet Vermouth Sherry, or Brandy
- 1/4 cup Dry White Wine or Lillet Blanc
- 1 Bay Leaf
- Pinch of Celery Seeds
- 2-3 lb Beef Chuck Roast
- Salt and Pepper to taste
- 1 tablespoon Butter for searing
- 1 tablespoon Oil for searing
- 1/2 cup Beef Broth
- 1 tablespoon Worcestershire Sauce
- 1 tablespoon Apple Cider Vinegar
- 1 tablespoon Onion Powder
- 1 tablespoon Beef Bouillon optional
- 1 tablespoon Dried Herbs optional
- 1 tablespoon Cornstarch optional, for thickening gravy
Caramelize the Onions:
In the same skillet, add onions, garlic, and fresh thyme. Cook over medium heat until the onions are soft and golden, about 10 minutes.
Prepare the Slow Cooker or Dutch Oven:
If using a slow cooker, place the beef roast in the cooker and top with caramelized onions, garlic, bay leaf, and seasonings. Pour in beef broth, Worcestershire sauce, apple cider vinegar, sweet vermouth, and dry white wine. If using a Dutch oven, follow the same steps, and bake at 275°F for 1.5-3 hours.
