Ingredients
  

  • 2 cups Heavy Cream
  • 3/4 cup Whole Milk
  • 1/2 cup Granulated Sugar
  • 5 Egg Yolks
  • 2 teaspoons Vanilla Bean Extract, or Paste
  • Pinch of Salt

Instructions
 

Create the Egg Yolk Mixture:

  • Whisk egg yolks and sugar in a bowl until pale and creamy.

Slowly Add Cream and Milk:

  • Gradually add the heated cream and milk mixture to the egg yolk mixture while whisking continuously.

Cook the Custard:

  • Stir the mixture over low heat until it thickens and coats the back of a spoon, reaching 170°F (77°C).

Strain and Chill:

  • Strain the custard through a fine-mesh sieve to remove any lumps. Stir in vanilla extract, then chill in the fridge for a few hours or overnight.

Churn the Ice Cream:

  • With Ice Cream Maker: Chill the ice cream maker’s freezer bowl for 24 hours before adding the custard. Churn for 20-25 minutes until creamy.
  • Without Ice Cream Maker: Freeze the custard in ice cube trays, then blend the frozen cubes with remaining custard. Freeze for 4-8 hours, or until scoopable.

Serve and Enjoy:
