Ingredients
  

For the Chia Pudding

  • 14 oz lite coconut milk Use canned coconut milk for creaminess.
  • 6 tbsp chia seeds Chia seeds are rich in fiber and omega-3 fatty acids.
  • 5 tbsp unsweetened shredded coconut Adds texture and coconut flavor to the pudding.
  • 5-6 tbsp pure maple syrup Adjust to taste based on your sweetness preference.
  • 1 tsp vanilla extract For added flavor.

For Layering

  • 1 cup fresh mango (diced and chilled) Can substitute with other fruits like berries or bananas.

Preparation of Chia Pudding

  • In a bowl, combine the coconut milk, chia seeds, shredded coconut, maple syrup, and vanilla extract. Whisk until well combined.
  • Let the mixture sit for about 30 minutes at room temperature.
  • Mix once more, cover, and refrigerate for at least 3 hours (or overnight for best results).

Assembly of Parfait

  • Remove the pudding from the fridge about 15 minutes prior to serving.
  • Layer some pudding into the bottom of each serving glass.
  • Layer diced fresh mango on top of the pudding.
  • Continue alternating layers of chia pudding and diced mango until the glasses are filled to the top, finishing with mango.
  • Top with shredded coconut and serve immediately or keep in the fridge until ready to serve.

Notes

For added flavor, consider drizzling extra maple syrup on top before serving. This parfait can last in the fridge for 3-4 days when stored properly.
