Ingredients
  

For the Fresh Spring Rolls

  • 8 pieces Rice paper wrappers Soaked in warm water before use
  • 1 cup Lettuce leaves Rinsed and dried
  • 1 cup Cucumber, julienned
  • 1 cup Carrots, julienned
  • 1 cup Bell peppers, thinly sliced
  • 1 cup Fresh herbs (mint, cilantro, or basil)

For the Creamy Peanut Sauce

  • 1/2 cup Peanut butter
  • 1 tablespoon Soy sauce
  • 1 tablespoon Lime juice Freshly squeezed
  • 1 tablespoon Honey or maple syrup As per preference
  • 1 clove Garlic, minced
  • 2-3 tablespoons Water To adjust consistency

Instructions
 

Preparation

  • Prepare the peanut sauce by whisking together the peanut butter, soy sauce, lime juice, honey or maple syrup, minced garlic, and enough water to reach the desired consistency. Set aside.
  • Dip a rice paper wrapper in warm water for about 10-15 seconds until soft.
  • Lay the softened wrapper on a clean surface.
  • Place a lettuce leaf, a small amount of cucumber, carrots, bell peppers, and fresh herbs in the center of the wrapper.
  • Fold the sides in and roll tightly from the bottom up.
  • Repeat with remaining wrappers and fillings.

Serving

  • Serve the spring rolls with the creamy peanut sauce for dipping.

Notes

These fresh spring rolls are best enjoyed immediately with a side of the creamy peanut sauce. They also make a great appetizer or light meal. For storage, keep leftovers in an airtight container in the fridge and consume within a day.
