Ingredients
  

For the Roll-Ups

  • 4 large large flour tortillas
  • 8 oz cream cheese, softened Can be substituted with Greek yogurt or dairy-free options
  • 1/2 cup shredded carrots
  • 1/2 cup cucumber, thinly sliced
  • 1 large bell pepper, thinly sliced (any color)
  • 1 cup spinach or lettuce, chopped
  • 1/2 cup cherry tomatoes, halved
  • to taste Salt and pepper

Instructions
 

Preparation

  • Start by spreading the softened cream cheese evenly over each tortilla.
  • Layer the shredded carrots, cucumber slices, bell pepper strips, spinach, and cherry tomatoes on top of the cream cheese.
  • Sprinkle with a little salt and pepper if desired.
  • Roll each tortilla tightly from one end to the other, pressing gently as you go.
  • Once rolled, slice them into bite-sized pieces and serve fresh.

Notes

Store in an airtight container in the refrigerator for best freshness. Can be frozen; wrap tightly in plastic wrap before freezing.
