Ingredients
  

  • 4 cups cubed watermelon
  • 10 fresh mint leaves
  • 2 tbsp sugar
  • 4 oz white rum
  • 2 limes juice and slices for garnish
  • 1 cup club soda or sparkling water
  • Ice cubes

Optional Add-ins:

  • Splash of simple syrup if watermelon isn’t sweet enough
  • Extra lime wedges for garnish
  • Additional mint sprigs for garnish
  • Splash of orange liqueur

Instructions
 

  • Cut watermelon into chunks and blend until smooth. Strain the juice.
  • Muddle mint leaves and sugar together in a pitcher to release mint oils.
  • Add lime juice, rum, and watermelon juice to the pitcher. Stir until sugar dissolves.
  • Taste and adjust sweetness with more sugar or lime if needed.
  • Serve in glasses filled with ice. Top with club soda for fizz.
  • Garnish with lime wedges and mint sprigs.

Notes

Refrigerate the watermelon for a colder and more refreshing drink.
You can customize with basil instead of mint, or add more rum for a stronger cocktail.
This drink is best served immediately, while cold and fizzy.
