- 4 cups cubed watermelon
- 10 fresh mint leaves
- 2 tbsp sugar
- 4 oz white rum
- 2 limes juice and slices for garnish
- 1 cup club soda or sparkling water
- Ice cubes
Optional Add-ins:
- Splash of simple syrup if watermelon isn’t sweet enough
- Extra lime wedges for garnish
- Additional mint sprigs for garnish
- Splash of orange liqueur
Cut watermelon into chunks and blend until smooth. Strain the juice.
Muddle mint leaves and sugar together in a pitcher to release mint oils.
Add lime juice, rum, and watermelon juice to the pitcher. Stir until sugar dissolves.
Taste and adjust sweetness with more sugar or lime if needed.
Serve in glasses filled with ice. Top with club soda for fizz.
Garnish with lime wedges and mint sprigs.
Refrigerate the watermelon for a colder and more refreshing drink.
You can customize with basil instead of mint, or add more rum for a stronger cocktail.
