Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter, softened Make sure the butter is softened for easy creaming.
  • 1/2 cup sugar
  • 2 large eggs Can be substituted with flaxseed meal or applesauce.
  • 1 cup milk Substitute with almond milk or soy milk for a dairy-free version.
  • 1 teaspoon vanilla extract Can be replaced with orange or almond extract.

Main Ingredient

  • 1 cup Fruity Pebbles cereal Feel free to swap with another colorful cereal.

Preparation

  • Preheat the oven to 350°F (175°C) and grease a loaf pan.
  • In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the milk and vanilla extract.
  • In another bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Gently fold in the Fruity Pebbles cereal.
  • Pour the batter into the prepared loaf pan and smooth the top.

Baking

  • Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

This fruity loaf can be enjoyed warm or at room temperature. A dollop of butter or a drizzle of honey is a great addition. It’s also a lovely treat for brunch along with fresh fruit or yogurt. Allow the loaf to cool before slicing to prevent crumbling.
