Main Ingredients

  • 1 cup unsalted butter, softened Ensure butter is softened for the best texture.
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract You can substitute with almond extract for a variation.
  • 3 cups all-purpose flour Can substitute with gluten-free flour blend.
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk Can substitute with almond milk or soy milk.
  • 1 cup rainbow sprinkles Avoid using nonpareils as they may bleed color.

For the Glaze

  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • In a large bowl, cream together the softened butter and sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, alternating with milk, starting and ending with the flour mixture. Mix until just combined.
  • Fold in the rainbow sprinkles.
  • Pour the batter into the prepared loaf pan and smooth the top.

Baking

  • Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Glaze Preparation

  • For the glaze, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle over the cooled cake before serving.

Notes

Store in an airtight container at room temperature for 3-4 days. For longer storage, wrap in plastic wrap and freeze. Thaw at room temperature before serving.
