- 1-1.5 lbs sirloin ribeye, or tenderloin, cut into 1-inch cubes
- 4-6 cloves fresh garlic minced
- 4-5 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika optional
- 1 teaspoon fresh thyme or rosemary optional
Prepare the Steak: Pat steak cubes dry with paper towels to ensure proper searing. Season with salt, black pepper, and smoked paprika.
Heat the Pan: Heat a heavy-bottomed skillet over high heat and add olive oil.
Sear the Steak: Add steak cubes in a single layer. Cook for 2-3 minutes without stirring to achieve a perfect sear. Flip and cook for another 2-3 minutes.
Add Garlic Butter: Reduce heat to medium. Add butter, minced garlic, and optional herbs. Stir and cook for another 1-2 minutes until fragrant.
Rest and Serve: Remove from heat and let steak bites rest for 3-5 minutes before serving.
For extra tenderness, let steak come to room temperature for 30 minutes before cooking.
Do not overcrowd the pan to ensure proper browning.
Pair with roasted vegetables, mashed potatoes, or garlic bread for a complete meal.
