  • 3 lb sweet potatoes, peeled and sliced thin about 1/8-inch thick
  • 1/2 cup butter 1 stick
  • 1 1/2 cups heavy cream
  • 5 cloves garlic, finely minced
  • 1 tbsp chopped fresh thyme
  • 1 tsp cornstarch
  • 1/3 cup fresh parmesan cheese, grated
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a saucepan, melt the butter over low heat. Add the minced garlic and fresh thyme. Cook until the garlic is fragrant, about 2 minutes.
  • Stir in the heavy cream and cornstarch, mixing until smooth. Season with salt and pepper to taste.
  • In a large baking dish, layer half of the sweet potato slices.
  • Pour half of the garlic butter sauce over the potatoes.
  • Repeat with the remaining slices and sauce.
  • Sprinkle the top with grated parmesan cheese.

Baking

  • Cover loosely with aluminum foil and bake for 45 minutes.
  • Remove the foil and bake for another 15-20 minutes until the top is golden and bubbly.

Notes

Pairs wonderfully with roasted chicken or a green salad. For a special touch, add a dollop of sour cream.
