Ingredients
  

For the dough

  • 1 teaspoon salt
  • 1 cup warm water (about 100-110°F)
  • 1 tablespoon granulated sugar
  • 1 tablespoon instant dry yeast
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 2 teaspoons dried rosemary
  • 6 cloves garlic, finely chopped Use fresh garlic for the best flavor.
  • 2 to 2.5 cups all-purpose flour Add more flour if the dough is too sticky.
  • cup parmesan cheese, grated Can swap for cheddar for a different flavor.

For topping and greasing

  • 1 tablespoon butter (split for topping) Use half a tablespoon for each round.
  • 2 tablespoons olive oil For greasing the baking sheet.

Instructions
 

Preparation of Dough

  • Combine yeast, sugar, and warm water in a large bowl. Let it sit for a minute until it becomes foamy.
  • Stir in salt, herbs, and garlic until everything is well mixed.
  • Add 2 cups of flour and parmesan cheese, mixing to form a sticky dough.
  • Gradually add more flour while mixing until the dough is soft and stretchy.

Rising and Baking

  • Oil a bowl and place the dough inside. Cover it with a towel and let it rise for about an hour, until it doubles in size.
  • Preheat the oven to 375°F (190°C) and grease a baking sheet with olive oil.
  • Gently punch down the dough, then divide it into two balls. Shape them into rounds and place on the baking sheet.
  • Cover loosely and let rise for another 15-20 minutes.
  • Brush half a tablespoon of butter on top of each dough round before baking.
  • Bake for 18-20 minutes until golden and sounds hollow when tapped underneath.
  • Let cool slightly on a rack before slicing.

Notes

This bread pairs great with a variety of soups and salads. Store any leftovers in an airtight container. It can also be frozen.
