  • 1 medium head medium head cauliflower, cut into florets (about 8 cups)
  • 3 Tbsp extra-virgin olive oil
  • 1.5 tsp paprika
  • 0.75 tsp kosher salt
  • 0.5 tsp cracked black pepper
  • 3 cloves garlic, minced
  • 2 to 3 Tbsp grated Parmesan cheese
  • 1/2 of a lemon Juice of 1/2 lemon
  • 2 Tbsp fresh parsley, finely chopped

Instructions
 

Preparation

  • Place a large rimmed baking sheet in the center of the oven. Preheat the oven to 450ºF.
  • Cut the cauliflower into small florets and add them to a large bowl. Toss the florets with olive oil, paprika, salt, and black pepper until they are evenly coated.

Cooking

  • Spread the cauliflower onto the preheated baking sheet in a single layer, leaving space between florets. Roast for 20–25 minutes, tossing halfway through, until lightly charred and tender.
  • Sprinkle Parmesan cheese and minced garlic over the roasted cauliflower. Return to the oven for an additional 5 minutes, until the cheese melts and the garlic is nicely toasted.

Serving

  • Remove from the oven. Drizzle with fresh lemon juice and garnish with parsley before serving.

Notes

Make sure to cut cauliflower florets into similar sizes for even cooking. Toss well to ensure each piece is coated with flavor. Different types of cheese can be used for variety. Don't skip the lemon juice; it adds a bright flavor. Keep an eye on it while roasting to avoid burns.
