  • 4 pieces lamb chops
  • 2 tablespoons butter unsalted
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped or half the amount if using dried
  • 1 whole lemon, juiced
  • to taste salt and pepper
  • as needed tablespoons olive oil, for searing

Preparation

  • Season lamb chops with salt and pepper.

Cooking

  • In a skillet, heat olive oil over medium-high heat. Sear the lamb chops for 4-5 minutes on each side until golden brown.
  • In a small bowl, mix butter, minced garlic, and chopped rosemary.
  • Once the lamb chops are cooked to your liking, add the garlic rosemary butter to the skillet and baste the chops for about 1-2 minutes.
  • Remove the chops from heat, drizzle with lemon juice, and serve immediately.

Notes

Make sure to let the lamb chops come to room temperature before cooking for even cooking. If the butter starts to brown too quickly, lower the heat to avoid burning.
