Garlic Shrimp Au Gratin

Ingredients
  

Shrimp and Seasoning

  • 2 pounds large shrimp (peeled, deveined, tails removed)
  • 2 tablespoons olive oil
  • to taste Salt and pepper

Aromatics and Cream Sauce

  • 4 tablespoons butter
  • 1/2 cup finely chopped onion
  • 4 cloves garlic (minced)
  • 2 tablespoons fresh basil (chopped or 1 tablespoon dried)
  • 1/8 teaspoon ground nutmeg
  • 1 cup heavy whipping cream
  • 1 cup grated parmesan cheese (divided)
  • 1 cup shredded Monterey Jack cheese

Topping

  • 1/2 cup crushed pork rind crumbs

Instructions
 

Preparation

  • Preheat oven to 375°F (190°C). Grease a large baking dish with butter or cooking spray.
  • Heat olive oil in a large skillet over medium-high heat. Season shrimp with salt and pepper, then sear for 1–2 minutes per side until just pink. Remove from skillet and set aside.
  • In the same skillet, melt butter. Add chopped onion and sauté until soft (3–4 minutes). Add garlic, basil, and nutmeg. Cook for 30 seconds until fragrant.

Cooking

  • Pour in heavy cream and simmer for 3–4 minutes until slightly thickened.
  • Stir in 1/2 cup parmesan and all the Monterey Jack cheese. Mix until smooth. Season to taste.
  • Place shrimp in the prepared baking dish. Pour the cream sauce evenly over the shrimp.
  • In a small bowl, mix the remaining 1/2 cup parmesan with crushed pork rinds. Sprinkle this mixture over the dish.
  • Bake for 25 minutes until the top is golden and the sauce is bubbling.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Freeze in a freezer-safe container for up to 2 months. Reheat in the oven to retain texture.
