Ingredients
  

Brownie Base

  • 1 cup unsalted butter At room temperature
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips

Coconut & Pecan Topping

  • 1 cup shredded coconut Use unsweetened for balanced flavor
  • 1 cup chopped pecans Can substitute with walnuts if preferred.

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  • In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition, then stir in the vanilla.
  • In another bowl, mix the flour, cocoa powder, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
  • Fold in the chocolate chips.

Assembly and Baking

  • Pour half of the brownie batter into the prepared baking pan and spread evenly.
  • In a separate bowl, mix the coconut and pecans, then spread this mixture over the brownie layer.
  • Top with the remaining brownie batter and spread gently.
  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow to cool before cutting into bars and serving.

Notes

These bars are great on their own but can be topped with whipped cream or ice cream. For best results, don't overmix the batter after adding the dry ingredients. To customize, consider using unsweetened coconut for balance or swapping pecans for walnuts.
