- 1 cup all-purpose gluten-free baking flour
- 2 teaspoons xanthan gum
- 3 large eggs
In a large mixing bowl, mix 1 cup of gluten-free flour and 2 teaspoons of xanthan gum. Whisk well to evenly distribute the xanthan gum.
Make a well in the flour mixture and crack 3 large eggs into it. Use a fork to gently mix the eggs with the flour, forming a dough.
Dust a clean surface with more gluten-free flour and knead the dough for 2-3 minutes until smooth.
Split the dough into four parts. Roll out one part until it's about 1/8-inch thick. Use a pasta machine for even thickness if available.
Cut the rolled dough into desired noodle shapes, like fettuccine or linguine.
Boil a large pot of salted water. Add the fresh pasta and cook for 2-3 minutes until tender but firm.
Drain the pasta, reserving a cup of cooking water, and mix with your favorite gluten-free sauce, adding some reserved water to help the sauce adhere.
