Ingredients
  

For the crust

  • 2 cups gingerbread cookies, crushed Use store-bought or homemade gingerbread cookies.
  • 1/2 cup unsalted butter, melted Ensure butter is not too hot when mixing.

For the filling

  • 16 oz cream cheese, softened Allow cream cheese to soften for easier mixing.
  • 3/4 cup granulated sugar
  • 2 large eggs Add eggs one at a time.
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup sour cream Swirl in for added creaminess.

Preparation

  • Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking pan.
  • In a bowl, combine crushed gingerbread cookies and melted butter. Press the mixture into the bottom of the prepared baking pan to form the crust.
  • In a large mixing bowl, beat the cream cheese and sugar until smooth.
  • Add eggs one at a time, beating well after each addition.
  • Mix in vanilla extract, cinnamon, ginger, nutmeg, and salt until well combined.
  • Pour the cream cheese mixture over the crust in the baking pan.
  • Swirl in the sour cream for added creaminess.

Baking

  • Bake for 30-35 minutes, or until the center is set.
  • Allow to cool before refrigerating for at least 2 hours.

Serving

  • Cut into bars and enjoy!

Notes

Serve chilled for the best texture and taste. These bars can be enhanced with powdered sugar or caramel sauce. Store leftovers in the fridge in an airtight container for 4-5 days.
