Cookies

  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon nutmeg
  • 0.25 teaspoon ground cloves
  • 0.5 teaspoon salt
  • 0.5 cups unsalted butter, softened Make sure the butter is soft for easy mixing.
  • 1 cup brown sugar
  • 0.5 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 cups rolled oats Use rolled oats for the best texture.

Filling

  • 1 cup heavy cream
  • 0.25 cup powdered sugar If you want a sweeter filling, add more powdered sugar.
  • 1 teaspoon vanilla extract For filling.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, whisk together flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt.
  • In a separate bowl, cream together the butter, brown sugar, and granulated sugar until fluffy.
  • Beat in the egg and vanilla extract.
  • Gradually mix in the dry ingredients.
  • Stir in the oats.
  • Drop tablespoons of dough onto a baking sheet lined with parchment paper.

Baking

  • Bake for 10-12 minutes or until edges are golden.
  • Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Filling and Assembly

  • To make the filling, whip the heavy cream until soft peaks form, then mix in powdered sugar and vanilla extract.
  • Once the cookies are cool, spread or pipe the cream filling between two cookies to create sandwiches.
