Glazed Roasted Carrots

Ingredients
  

  • 1 pound whole carrots, peeled and trimmed
  • 2 tablespoons olive oil
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon ground black pepper
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons hone y
  • 1 teaspoon fresh thyme leaves
  • 1 tablespoon fresh parsley, chopped

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Arrange carrots in a single layer on a rimmed baking sheet and coat thoroughly with olive oil, salt, and pepper.
  • Roast carrots for 15 to 20 minutes until tender-crisp and beginning to brown.
  • In a small bowl, whisk together the melted butter and honey until emulsified.
  • Drizzle the honey-butter mixture over the carrots and toss with tongs to ensure uniform coverage.
  • Return carrots to the oven and roast for an additional 5 to 7 minutes until the glaze has thickened and caramelized.
  • Remove from oven and garnish with fresh thyme and parsley before service.
