Instructions
Preheat oven to 400°F (200°C).
Arrange carrots in a single layer on a rimmed baking sheet and coat thoroughly with olive oil, salt, and pepper.
Roast carrots for 15 to 20 minutes until tender-crisp and beginning to brown.
In a small bowl, whisk together the melted butter and honey until emulsified.
Drizzle the honey-butter mixture over the carrots and toss with tongs to ensure uniform coverage.
Return carrots to the oven and roast for an additional 5 to 7 minutes until the glaze has thickened and caramelized.
Remove from oven and garnish with fresh thyme and parsley before service.
