Ingredients
  

Cookie Base

  • 1 cup unsalted butter, softened Use room temperature for easier mixing.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Toppings

  • 1 cup mint frosting Store-bought or homemade.
  • 1 cup chocolate ganache Can be drizzled or swirled.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  • Beat in the eggs one at a time, then stir in the vanilla.
  • In another bowl, mix together the flour, cocoa powder, baking soda, and salt.
  • Gradually blend the dry ingredients into the wet mixture.
  • Roll the dough into balls and place them on baking sheets lined with parchment paper.

Baking

  • Bake for 10-12 minutes, then let them cool completely.

Topping

  • Spread a layer of mint frosting on top of each cookie.
  • Drizzle or swirl chocolate ganache over the mint frosting.
  • Allow the ganache to set before serving.

Notes

Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze in a freezer-safe container. Thaw at room temperature before serving.
