Ingredients
  

Main Ingredients

  • 1 lb chicken breast, diced
  • 2 cups cooked quinoa or rice
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers, diced
  • 1 cup feta cheese, crumbled
  • 1/2 cup Kalamata olives, pitted and sliced
  • 2 tablespoons olive oil for cooking chicken

For Tzatziki

  • 1 cup Greek yogurt
  • 1 cucumber grated and drained
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon vinegar
  • to taste salt and dill

Instructions
 

Cooking the Chicken

  • In a skillet, heat olive oil over medium heat. Add diced chicken and cook until browned and cooked through (about 6-8 minutes). Season with salt and pepper.

Preparing the Tzatziki

  • While the chicken is cooking, prepare the tzatziki by mixing together yogurt, grated cucumber, garlic, olive oil, vinegar, salt, and dill in a bowl.

Assembling the Bowls

  • In serving bowls, layer the cooked quinoa or rice, followed by the cooked chicken, and then top with diced cucumbers, cherry tomatoes, onion, bell peppers, feta cheese, and olives.
  • Finish with a generous dollop of tzatziki on top.

Serving

  • Serve immediately or store in the refrigerator for meal prep.

Notes
