Ingredients
  

  • 1 cup plain Greek yogurt (full-fat recommended)
  • 3-4 tbsp almond flour (or oat flour)
  • 2-3 tbsp maple syrup (or honey)
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 1/3 cup mini chocolate chips
  • 2 tbsp chopped walnuts (optional)

Instructions
 

  • Start with cold Greek yogurt from the fridge. Full-fat is creamiest, but 2% works too.
  • Whisk together Greek yogurt, maple syrup, vanilla, and salt until smooth.
  • Gradually mix in almond flour, one tablespoon at a time, until thickened to cookie dough consistency.
  • Fold in mini chocolate chips and walnuts (if using).
  • Chill in the fridge at least 30 minutes before serving.

Notes

Chill for at least 30 minutes for the best texture. Store in the fridge up to 5 days. Customize with sprinkles, cocoa powder, peanut butter, or dried fruit for endless variations.
