Ingredients
  

For the Cake:

  • 1 box white cake mix
  • 1 box 3 oz lime Jell-O gelatin
  • 4 large eggs
  • ¾ cup vegetable oil
  • ¾ cup orange juice
  • Zest of 1 lime optional but recommended

For the Glaze/Frosting (optional):

  • 1 cup powdered sugar
  • 2 tbsp fresh lime juice
  • Zest of ½ lime

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a 9x13-inch pan or two round cake pans.
  • In a large mixing bowl, combine the white cake mix, lime Jell-O powder, eggs, vegetable oil, orange juice, and lime zest.
  • Beat the mixture until smooth and well blended—about 2 minutes.
  • Pour the batter evenly into the prepared pan(s).
  • Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool completely on a rack.
  • Meanwhile, prepare the glaze by whisking together powdered sugar, lime juice, and lime zest until smooth.
  • Pour the glaze over the cooled cake, spreading evenly to coat.
  • Optional: garnish with whipped cream, lime slices, or sprinkles. Chill before serving if desired.

Notes

For extra flair, add green food coloring to the batter.
Store leftovers in the fridge; the flavor actually improves overnight.
Swap orange juice for pineapple juice for a tropical twist.
Cream cheese frosting also pairs beautifully with this cake if you want something richer.
