Grilled Chicken Broccoli Bowls with Creamy Garlic Sauce

Ingredients
  

  • 2 lbs boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon sal t
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 4 cups broccoli florets
  • 2 cups cooked white rice
  • 1 cup heavy cream
  • 4 cloves garlic , minced
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon unsalted butter

Instructions
 

  • Season chicken breasts with olive oil, salt, pepper, and oregano.
  • Grill chicken over medium-high heat for 6-8 minutes per side or until internal temperature reaches 165 degrees Fahrenheit.
  • Steam broccoli florets for 5 minutes until tender-crisp.
  • In a small saucepan, melt butter over medium heat and sauté minced garlic for 1 minute until fragrant.
  • Whisk in heavy cream and simmer for 3-5 minutes until slightly thickened.
  • Stir in Parmesan cheese until melted and smooth.
  • Slice grilled chicken into strips.
  • Assemble bowls by placing rice at the bottom, topped with chicken and broccoli.
  • Drizzle creamy garlic sauce over the top.
