Ingredients
  

For the Cookie Dough

  • 1 cup unsalted butter, softened Make sure your butter is softened for easy mixing.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips Can be swapped with dark chocolate chips.
  • 1/2 cup green candy melts
  • 1/2 teaspoon mint extract Optional; can be omitted for a classic cookie flavor.

Instructions
 

Preparation

  • Preheat your oven to 350°F (180°C).
  • In a large mixing bowl, cream the butter, granulated sugar, and brown sugar until smooth.
  • Add in the eggs, vanilla extract, and mint extract; mix well.
  • In another bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Stir in the white chocolate chips and green candy melts.
  • Drop spoonfuls of cookie dough onto a baking sheet lined with parchment paper.

Baking

  • Bake for 10-12 minutes until edges are golden.
  • Allow cookies to cool on a wire rack before serving.

Notes

Store in an airtight container; cookies last up to a week in the fridge. Can be frozen for up to three months. Reheat in the microwave for about 10-15 seconds.
