  • 1 lb lean ground beef (93% preferred) For a leaner option, 93% lean is preferred.
  • 2 medium sweet potatoes (peeled and diced into 1/2-inch cubes)
  • 1 large avocado (sliced just before serving) Add right before serving to avoid browning.
  • 1 cup cottage cheese (low-fat or full-fat) Choose based on your dietary preference.
  • 1 large yellow onion (diced)

Seasonings and Condiments

  • 2 tbsp olive oil (divided) Use one tablespoon for sweet potatoes and one for ground beef.
  • 1 packet taco seasoning (or 2 tbsp homemade) Use your preferred taco seasoning.
  • 2 tbsp hot honey Adjust quantity based on spice preference.
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • to taste Salt and black pepper

Preparation

  • Preheat oven to 400°F.
  • Toss diced sweet potatoes with 1 tablespoon olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread in a single layer on a parchment-lined baking sheet.

Cooking Sweet Potatoes

  • Roast sweet potatoes for 40-45 minutes, stirring once halfway through until fork-tender with caramelized edges.

Cooking Ground Beef

  • Meanwhile, heat the remaining tablespoon of olive oil in a large skillet over medium-high heat.
  • Add diced onion and cook for 5-6 minutes until softened and translucent.
  • Add the ground beef, breaking it up with a wooden spoon. Cook for 6-8 minutes until no pink remains.
  • Drain excess fat, stir in taco seasoning, and cook for 2 minutes more until fragrant.

Assembly

  • Once everything is ready, assemble bowls by layering warm roasted sweet potatoes, seasoned ground beef, sliced avocado, and cottage cheese.
  • Drizzle with hot honey to taste and serve immediately.

Notes

To store leftovers, place them in airtight containers for up to 3 days in the refrigerator or freeze for up to 2 months. Reheat in the microwave or stovetop.
