Preparation

  • In a large skillet, heat olive oil over medium heat.
  • Add the diced onion and garlic, and sauté until fragrant.
  • Add the ground turkey, breaking it apart with a spatula, and cook until browned.
  • Stir in the diced bell peppers, chili powder, cumin, salt, and pepper.
  • Continue to cook until the peppers are tender.

Serving

  • Serve over rice, in lettuce wraps, or as a taco filling.

Notes

Store leftovers in an airtight container in the fridge for up to three days. You can also freeze the cooked mixture for up to two months. Thaw in the fridge overnight and reheat on the stove or microwave.
