  • 1 lb lean ground turkey
  • 2 medium sweet potatoes, cubed (about 2 cups)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium bell pepper, diced
  • 2 cups fresh spinach or kale
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 tsp olive oil
  • Salt and pepper, to taste
  • 1 tsp paprika
  • 1 tsp dried thyme

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, heat the olive oil.
  • Add the ground turkey, season with salt, pepper, paprika, and thyme. Cook until browned (about 5–7 minutes).
  • Add the diced onion and bell pepper to the skillet; cook until softened (about 5 minutes).
  • Stir in the spinach or kale until wilted.
  • In a mixing bowl, combine the turkey-veggie mixture with cubed sweet potatoes; toss well.
  • Transfer to a greased baking dish, top with cheddar and mozzarella cheese, and bake for 25–30 minutes until bubbly and golden.

Notes

Serve on its own or with a side salad or whole-grain bread for added crunch. Enhance flavor with sour cream or green onions. To store leftovers, place in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. Reheat in the microwave or oven.
