Ingredients
  

Pasta and Main Ingredients

  • 8 oz pasta (fusilli or penne) Use your preferred pasta shape.
  • 1 block feta cheese Can substitute with goat cheese if desired.
  • 2 cups cherry tomatoes These will be roasted.
  • 1 medium zucchini, chopped
  • 1 medium bell pepper, chopped
  • 3 cloves garlic, minced Gives flavor to the dish.
  • 2 tbsp olive oil For drizzling over the vegetables.
  • Salt and pepper to taste
  • Fresh basil for garnish Add before serving.

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a baking dish, add the cherry tomatoes, zucchini, bell pepper, and minced garlic. Drizzle with olive oil, and season with salt and pepper.
  • Place the block of feta cheese in the center of the vegetables.

Cooking

  • Bake in the preheated oven for 25-30 minutes, until the vegetables are roasted and the feta is soft.
  • Meanwhile, cook the pasta according to package instructions until al dente.
  • Once the feta and vegetables are done, remove them from the oven and use a fork to mix everything together.
  • Add the cooked pasta to the baking dish, and toss to combine.
  • Garnish with fresh basil before serving. Enjoy your healthy baked feta pasta!

Notes

To store leftovers, let the pasta cool completely. Then transfer it to an airtight container and place it in the fridge for about 3-4 days. It can also be frozen in portions for up to 2 months. Reheat in the oven or microwave.
