  • 2 cups rolled oats
  • 2 cups almond milk (or any plant-based milk) Can substitute with any preferred plant-based milk.
  • 1 cup fresh or frozen blueberries Fresh blueberries are preferred for flavor.
  • 1/2 cup maple syrup or agave syrup Adjust sweetness to taste.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix together oats, almond milk, maple syrup, vanilla extract, baking powder, cinnamon, and salt.
  • Gently fold in the blueberries.
  • Pour the mixture into a greased baking dish.

Baking

  • Bake for 30-35 minutes or until the top is golden and set.
  • Let it cool slightly before serving. Enjoy warm or store in the refrigerator for meal prep.

Notes

To keep leftovers fresh, store uneaten oatmeal in an airtight container in the refrigerator. It will last about 4-5 days. You can also freeze portions for quick breakfasts later. Thaw overnight in the fridge and reheat in the microwave or oven.
