  • 2 medium sweet potatoes, cubed
  • 2 cups cooked rice (brown or white)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh vegetables (e.g., spinach, bell peppers) for topping
  • Optional: fresh herbs for garnish

Preparation

  • Preheat the oven to 425°F (220°C).
  • In a bowl, toss sweet potatoes with 1 tablespoon of olive oil, garlic powder, paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes or until tender.

Cooking

  • While the sweet potatoes are roasting, heat the remaining tablespoon of olive oil in a skillet over medium heat.
  • Add the diced chicken, season with salt and pepper, and cook until browned and cooked through, about 7-10 minutes.

Assembly

  • In serving bowls, layer the cooked rice, roasted sweet potatoes, and cooked chicken.
  • Top with fresh vegetables and herbs if desired. Serve warm and enjoy!

Notes

Timing: Make sure to prep and cut your ingredients before starting to help everything cook evenly. For crispy sweet potatoes, don’t overcrowd the baking sheet. Chicken can be replaced with tofu or beans for a vegetarian option.
