Healthy Cottage Cheese Egg Bake

Ingredients
  

  • 8 large egg s
  • 1 cup low -fat cottage cheese
  • 1/2 cup shredded low-fat cheddar cheese
  • 1/2 cup fresh spinach, chopped
  • 1/4 cup red bell pepper, finely diced
  • 1/4 cup yellow onion, finely diced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius) and lightly grease an 8x8 or 9x9 inch baking dish with non-stick spray.
  • In a large mixing bowl, whisk the eggs until well combined and frothy.
  • Fold in the cottage cheese, shredded cheddar, chopped spinach, diced bell peppers, and onions until evenly distributed.
  • Add the salt, black pepper, and garlic powder to the mixture and stir well.
  • Pour the egg mixture into the prepared baking dish, spreading the vegetables evenly with a spatula.
  • Bake in the center rack of the oven for 30 to 35 minutes, or until the center is set and the edges are lightly golden brown.
  • Remove from the oven and allow the dish to rest for 5 minutes before slicing into 6 squares.
