Healthy Cottage Cheese Lasagna Bowl

Ingredients
  

  • 4 ounces whole wheat rotini or penne pasta
  • 8 ounces lean ground turkey (93% lean)
  • 1 cup low -sodium marinara sauce
  • 1/2 cup low -fat cottage cheese
  • 1/4 cup shredded part-skim mozzarella cheese
  • 1 tablespoon grated Parmesan cheese
  • 1 cup fresh baby spinach, chopped
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions
 

  • Bring a large pot of salted water to a boil and cook the whole wheat pasta according to package directions until al dente.
  • While pasta cooks, heat a non-stick skillet over medium-high heat and add the ground turkey.
  • Brown the turkey, breaking it into small crumbles, until no longer pink (approximately 7-8 minutes).
  • Stir in the marinara sauce, dried oregano, garlic powder, salt, and pepper; simmer for 5 minutes.
  • Add the chopped baby spinach to the meat sauce and stir until wilted.
  • Drain the pasta and divide equally into two serving bowls.
  • Top each bowl with the meat sauce mixture.
  • Dollop 1/4 cup of cottage cheese into the center of each bowl and stir slightly to create a creamy texture.
  • Sprinkle with mozzarella and Parmesan cheese, then microwave for 30-45 seconds to melt the cheese if desired.
