Healthy Samosa Energy Balls

Base Ingredients:
- 1½ cups raw cashews
- ¾ cup unsweetened shredded coconut
- 12-15 Medjool dates pitted
- 1 tbsp coconut oil
Spice Blend:
- 1½ tsp cumin seeds
- 1 tsp coriander powder
- ½ tsp garam masala
- ¼ tsp turmeric
- ¼-½ tsp cayenne pepper
- ½ tsp sea salt
Optional Mix-ins:
- 3 tbsp frozen peas thawed and patted dry
- 2 tbsp finely diced cooked potato
- 1-2 tbsp minced fresh cilantro
- 1 small green chili minced
Toast the cumin seeds in a small pan over medium heat for 30-45 seconds until fragrant.
Add cashews to a food processor and pulse until coarsely chopped.
Add dates, coconut oil, toasted cumin seeds, and the rest of the spices. Pulse until the mixture comes together.
Transfer mixture to a bowl if adding peas, potato, or cilantro, and fold them in by hand.
Roll about 1 tablespoon of the mixture into balls using slightly wet hands.
Place energy balls on a parchment-lined tray and refrigerate for at least 30 minutes.
Store in an airtight container in the fridge for up to 2 weeks.
Soak dates in warm water for 10 minutes if they are dry.
Substitute cashews with almonds if preferred.
Add more coconut oil if the mixture is too dry.
