Healthy Samosa Energy Balls

Ingredients
  

Base Ingredients:

  • cups raw cashews
  • ¾ cup unsweetened shredded coconut
  • 12-15 Medjool dates pitted
  • 1 tbsp coconut oil

Spice Blend:

  • tsp cumin seeds
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • ¼ tsp turmeric
  • ¼-½ tsp cayenne pepper
  • ½ tsp sea salt

Optional Mix-ins:

  • 3 tbsp frozen peas thawed and patted dry
  • 2 tbsp finely diced cooked potato
  • 1-2 tbsp minced fresh cilantro
  • 1 small green chili minced

Instructions
 

  • Toast the cumin seeds in a small pan over medium heat for 30-45 seconds until fragrant.
  • Add cashews to a food processor and pulse until coarsely chopped.
  • Add dates, coconut oil, toasted cumin seeds, and the rest of the spices. Pulse until the mixture comes together.
  • Transfer mixture to a bowl if adding peas, potato, or cilantro, and fold them in by hand.
  • Roll about 1 tablespoon of the mixture into balls using slightly wet hands.
  • Place energy balls on a parchment-lined tray and refrigerate for at least 30 minutes.
  • Store in an airtight container in the fridge for up to 2 weeks.

Notes

Soak dates in warm water for 10 minutes if they are dry.
Substitute cashews with almonds if preferred.
Add more coconut oil if the mixture is too dry.
