Ingredients
  

For the Cake Base:

  • 1 store-bought angel food cake cut into 1-inch cubes
  • 2 packages 3.4 oz each instant vanilla pudding mix
  • 3 cups cold milk
  • 1 tsp vanilla extract
  • 8 oz whipped topping like Cool Whip, divided

For the Fruit Layer:

  • 2 cups fresh strawberries sliced
  • 1 cup fresh blueberries
  • 1 can 8 oz crushed pineapple, drained

For the Topping:

  • 1 cup whipped topping reserved from the 8 oz
  • ¼ cup toasted coconut flakes
  • ¼ cup sliced almonds optional

Instructions
 

Prepare the Cake Base:

  • Cut the angel food cake into 1-inch cubes.
  • Place half of the cubes into a 9x13 dish, pressing down slightly.

Make the Pudding Mixture:

  • In a bowl, whisk pudding mix with cold milk for 2 minutes until thickened.
  • Let stand for 5 minutes, then gently fold in 2 cups whipped topping and vanilla extract.

Create the Layers:

  • Spread half of the pudding mixture over the cake in the dish.
  • Layer with strawberries, blueberries, and drained pineapple.
  • Top with remaining cake cubes.
  • Spread the rest of the pudding mixture over the top, filling all gaps.

Finish the Topping:

  • Spread remaining whipped topping over the top layer.
  • Sprinkle with toasted coconut and optional almonds.
  • Cover and refrigerate at least 4 hours (preferably overnight).

Notes

This dessert is best served chilled.
Make it a day ahead for maximum flavor fusion.
For a gluten-free version, use gluten-free angel food cake and check pudding mix labels.
