Ingredients
  

  • pounds Yukon Gold potatoes cut into 1-inch chunks
  • 1 cup Hellmann's mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • ¼ teaspoon sugar
  • ½ teaspoon kosher salt plus more to taste
  • ¼ teaspoon freshly ground black pepper plus more to taste
  • 4 hard-boiled eggs peeled and chopped
  • cup finely diced red onion
  • ½ cup diced celery
  • 2 tablespoons fresh chopped parsley
  • 1 teaspoon celery seeds
  • ½ teaspoon smoked paprika
  • 2 tablespoons chopped fresh dill optional

Instructions
 

  • Cook the Potatoes: Place potatoes in a large pot, cover with cold water, and add 1 tablespoon salt. Bring to a boil, then reduce to simmer for 7-9 minutes until fork-tender.
  • Drain and Season: Drain the potatoes and sprinkle with 1 teaspoon apple cider vinegar while warm. Let cool for 10-15 minutes.
  • Prepare the Dressing: In a large mixing bowl, whisk together Hellmann's mayonnaise, Dijon mustard, apple cider vinegar, celery seeds, smoked paprika, salt, and pepper until smooth.
  • Combine: Add slightly warm potatoes to the dressing and gently fold to coat. Let cool for 15 minutes.
  • Add Mix-ins: Gently fold in chopped eggs, celery, red onion, and parsley.
  • Chill: Cover and refrigerate for at least 3 hours or overnight for best flavor.
  • Final Touches: Remove from the fridge 20 minutes before serving, adjust seasoning, and garnish with extra paprika and fresh herbs.

Notes

For a lighter version, substitute half the mayo with Greek yogurt.
Letting the salad rest overnight enhances the flavors.
Try adding 1 tablespoon pickle juice for extra tanginess.
