Ingredients
  

For the stuffed peppers

  • 4 pieces bell peppers Any color of bell pepper can be used.
  • 1 cup ricotta cheese Creamy cheese for filling.
  • 1/2 cup grated parmesan cheese Adds a nutty flavor.
  • 1 cup fresh herbs (such as basil, parsley, or oregano), chopped Use a mix for variety.
  • 1 tbsp olive oil For drizzling and flavor.
  • to taste Salt and pepper Adjust seasoning to your preference.

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Slice the tops off the bell peppers and remove the seeds.
  • In a bowl, mix together the ricotta cheese, parmesan cheese, fresh herbs, salt, and pepper.
  • Stuff the mixture into each bell pepper until full.
  • Place the stuffed peppers in a baking dish and drizzle with olive oil.

Baking

  • Bake in the preheated oven for about 30-35 minutes, until the peppers are tender and the filling is heated through.

Serving

  • Serve warm as a side dish, or enjoy them as a light main course.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. Freeze in a freezer-safe container for up to 3 months.
