High Protein Banana Pudding

Ingredients
  

  • 2 cups non -fat Greek yogurt
  • 2 scoops (approx. 60g) vanilla whey protein powder
  • 1/2 cup skim milk or unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 2 ripe bananas , sliced
  • 20 vanilla wafer cookies
  • 2 tablespoons sugar -free vanilla instant pudding mix

Instructions
 

  • In a large mixing bowl, whisk together the Greek yogurt, vanilla protein powder, milk, vanilla extract, and dry pudding mix until the texture is completely smooth.
  • Let the mixture rest for 5 minutes to allow the pudding mix to hydrate and thicken.
  • Prepare four individual serving containers or one medium glass dish.
  • Place a layer of vanilla wafers at the bottom of the containers, followed by a layer of sliced bananas.
  • Spoon a portion of the protein pudding mixture over the banana layer, smoothing it with a spatula.
  • Repeat the layering process once more, ending with a layer of pudding.
  • Crush the remaining wafers and sprinkle them over the top for texture.
  • Cover and refrigerate for at least 1 hour to allow the wafers to soften and flavors to meld before serving.
