In a large mixing bowl, whisk together eggs, egg whites, milk, oregano, salt, and pepper.
Spread the roasted sweet potatoes and turkey mixture evenly into the prepared baking dish.
Pour the egg mixture over the solids and top with crumbled feta cheese.
Bake for 25 to 30 minutes, or until the center is set and the edges are lightly golden.
Allow the casserole to cool for 5 minutes before slicing into 8 portions.
