High Protein Sweet Potato Egg Casserole

Ingredients
  

  • 2 medium sweet potatoes, peeled and cubed into 1/2-inch pieces
  • 1 lb lean ground turkey sausage
  • 8 large egg s
  • 1 cup liquid egg whites
  • 1/2 cup skim milk
  • 1 medium yellow onion, diced
  • 3 cloves garlic , minced
  • 2 cups fresh baby spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Preheat oven to 400°F (200°C) and grease a 9x13 inch baking dish.
  • Toss cubed sweet potatoes with olive oil on a baking sheet and roast for 20 minutes until tender; then reduce oven temperature to 375°F (190°C).
  • In a large skillet over medium heat, brown the ground turkey sausage with diced onion and garlic until fully cooked.
  • Stir the chopped spinach into the turkey mixture until wilted, then remove skillet from heat.
  • In a large mixing bowl, whisk together eggs, egg whites, milk, oregano, salt, and pepper.
  • Spread the roasted sweet potatoes and turkey mixture evenly into the prepared baking dish.
  • Pour the egg mixture over the solids and top with crumbled feta cheese.
  • Bake for 25 to 30 minutes, or until the center is set and the edges are lightly golden.
  • Allow the casserole to cool for 5 minutes before slicing into 8 portions.
