  • 1 cup shelled pistachios Finely ground
  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup milk

Preparation

  • Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
  • In a food processor, blend the pistachios until finely ground.
  • In a bowl, mix the softened butter and sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In a separate bowl, combine the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, alternating with milk, and mix until just combined.
  • Fold in the ground pistachios.
  • Pour the batter into the prepared loaf pan and smooth the top.

Baking

  • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Serve on its own or with cream cheese/butter. Pairs well with tea or coffee. Store in an airtight container for up to three days. Freeze for longer storage.
