Ingredients
  

Cookie Base:

  • 2 1/4 cups all-purpose flour
  • 1 cup unsalted butter softened

  • 2 egg yolks

Caramel-Coconut Topping:

  • 2 cups sweetened shredded coconut
  • 1 cup soft caramel candies
  • 2 tablespoons heavy cream
  • 1 tablespoon corn syrup

Chocolate Coating:

  • 6 ounces dark chocolate 60-70% cocoa
  • 2 ounces milk chocolate

Instructions
 

Prepare the Cookie Dough:

  • In a bowl, cream butter and sugar until light and fluffy.
  • Mix in vanilla extract and egg yolks.
  • Gradually add flour and salt until the dough forms.
  • Chill dough for at least 1 hour.

Shape and Bake the Cookies:

  • Preheat oven to 350°F (175°C).
  • Roll dough to 1/4-inch thickness and cut with a round cookie cutter.
  • Bake for 10-12 minutes or until golden brown.
  • Let cool completely on a wire rack.

Toast the Coconut:

  • Spread shredded coconut on a baking sheet.
  • Bake at 325°F (160°C) for 5-7 minutes, stirring frequently.

Prepare the Caramel Topping:

  • Melt caramel candies with heavy cream and corn syrup over low heat.
  • Stir until smooth.
  • Mix in toasted coconut.

Assemble the Cookies:

  • Spread caramel-coconut mixture over each cookie.
  • Let set for 20 minutes at room temperature.
  • Melt and Coat with Chocolate:
  • Melt chocolate using a double boiler or microwave.
  • Dip the bottoms of cookies in chocolate and drizzle the top with melted chocolate.

Set and Serve:

  • Let cookies set on parchment paper until chocolate hardens.
  • Store in an airtight container.
