Honey Bacon Roasted Potatoes

Ingredients
  

  • 2 lbs Red potatoes, washed and cubed into 1-inch pieces
  • 6 slices Thick -cut bacon, cut into 1/2-inch pieces
  • 3 tbsp Hone y
  • 2 tbsp Extra virgin olive oil
  • 1 tsp Garlic powder
  • 1 tsp Kosher salt
  • 1/2 tsp Coarse ground black pepper
  • 2 tbsp Fresh parsley, finely chopped

Instructions
 

  • Preheat the oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  • In a large mixing bowl, toss the cubed potatoes with olive oil, kosher salt, black pepper, and garlic powder until evenly coated.
  • Spread the seasoned potatoes in a single layer on the prepared baking sheet.
  • Scatter the raw bacon pieces evenly over the potatoes.
  • Roast for 25 minutes, stirring once halfway through the cooking time.
  • Drizzle the honey over the potatoes and bacon, then toss with a spatula to ensure an even coating.
  • Return to the oven for an additional 10 to 15 minutes, until the potatoes are tender and caramelized and the bacon is crisp.
  • Remove from the oven and garnish with fresh parsley before serving hot.
