Ingredients
  

  • 2 cups sweet potatoes (peeled, cooked, and mashed)
  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup buttermilk
  • 2 large eggs
  • 1/4 cup unsalted butter (melted)
  • 1/4 cup honey
  • 1/4 cup unsalted butter (softened, for honey butter)
  • 2 tbsp honey (for honey butter)
  • 1 pinch salt (for honey butter)

Instructions
 

  • Peel and chop sweet potatoes. Boil 15–20 minutes until tender, then drain and mash.
  • In a bowl, whisk cornmeal, flour, baking powder, and salt. In another bowl, whisk mashed sweet potatoes, melted butter, buttermilk, honey, and eggs. Combine wet and dry ingredients into a smooth batter without overmixing.
  • Pour batter into a greased 9x9 dish. Bake at 350°F (175°C) for 20–25 minutes until golden and a toothpick comes out clean. Cool slightly.
  • In a small bowl, mix softened butter, honey, and a pinch of salt until smooth. Serve with warm cornbread.

Notes

Use leftover or canned sweet potatoes (well-drained and mashed) to save time. Don’t overmix the batter for the fluffiest texture. Add spices like cinnamon or nutmeg for warmth, or make it savory by skipping the honey and adding herbs. Serve warm with honey butter alongside chili, turkey, or ham.
