Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius).
Wash the pears, slice them in half lengthwise, and remove the cores using a melon baller or small spoon.
In a small mixing bowl, whisk together the melted butter, honey, cinnamon, vanilla extract, and sea salt until fully emulsified.
Place the pear halves cut-side up in a single layer in a 9x13 inch baking dish.
Brush the honey cinnamon mixture evenly over the exposed flesh of each pear half.
Roast in the center of the oven for 20 to 25 minutes until the fruit is tender and the glaze is bubbling.
Top with chopped walnuts during the last 5 minutes of roasting for a toasted finish.
Remove from the oven and baste the pears with the residual glaze from the bottom of the dish before serving warm.
