Honey Garlic Butter Roasted Carrots

Ingredients
  

  • 1 pound carrots , peeled and trimmed
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon hone y
  • 2 cloves garlic , minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon fresh parsley, finely chopped

Instructions
 

  • Preheat the oven to 425°F (220°C).
  • Slice carrots diagonally into 1-inch segments or leave small carrots whole.
  • In a small mixing bowl, whisk together the melted butter, honey, minced garlic, salt, and pepper.
  • Transfer carrots to a large rimmed baking sheet and pour the honey butter mixture over them.
  • Toss until carrots are evenly coated and spread them out in a single layer.
  • Roast in the oven for 20 minutes, tossing halfway through, until the carrots are tender and the edges are caramelized.
  • Garnish with fresh parsley and serve immediately.
