Instructions
Preheat the oven to 425°F (220°C).
Slice carrots diagonally into 1-inch segments or leave small carrots whole.
In a small mixing bowl, whisk together the melted butter, honey, minced garlic, salt, and pepper.
Transfer carrots to a large rimmed baking sheet and pour the honey butter mixture over them.
Toss until carrots are evenly coated and spread them out in a single layer.
Roast in the oven for 20 minutes, tossing halfway through, until the carrots are tender and the edges are caramelized.
Garnish with fresh parsley and serve immediately.
