Ingredients
  

For the Meatballs

  • 1 pound ground meat (beef, pork, turkey, or a mix) Choose your preferred meat.
  • 1 cup cooked rice (white or brown) Leftover rice works great.
  • 1/4 cup breadcrumbs Use plain or Italian-style.
  • 1 piece egg Acts as a binder.
  • 2 cloves garlic, minced Freshly minced preferred.
  • to taste tsp salt and pepper Adjust to your taste.

For the Sauce

  • 1/4 cup honey Natural sweetener.
  • 1/4 cup soy sauce Use tamari for gluten-free.
  • 1 tablespoon sesame oil (optional) For added flavor.

For the Vegetables

  • 2 cups mixed vegetables (peas, carrots, or broccoli) Choose your favorites.

For Garnish

  • Chopped green onions For added freshness.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, mix together ground meat, cooked rice, breadcrumbs, egg, minced garlic, salt, and pepper until well combined.
  • Shape the mixture into meatballs and place them in a baking dish.
  • In a separate bowl, whisk together honey, soy sauce, and sesame oil. Pour the honey garlic sauce over the meatballs.
  • Add vegetables around the meatballs in the baking dish.

Baking

  • Cover the baking dish with foil and bake for 25-30 minutes.
  • Remove the foil and bake for an additional 10 minutes, or until meatballs are cooked through and lightly browned.
  • Garnish with chopped green onions before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Freeze individual portions for up to 2 months.
