Ingredients
  

  • 1 pound Italian sausages, sliced into 1-inch rounds
  • 2 pounds Yukon Gold potatoes, scrubbed and cut into 1-inch cubes
  • 1 large red bell pepper, sliced into strips
  • 1 large red onion, cut into 1/2-inch wedges
  • 3 tablespoons extra virgin olive oil
  • 2 cloves garlic , minced
  • 1 teaspoon dried oregano
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon cracked black pepper
  • 2 tablespoons fresh flat-leaf parsley, chopped

Instructions
 

  • Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius).
  • In a large mixing bowl, combine the cubed potatoes, sliced bell peppers, and onion wedges.
  • Add the olive oil, minced garlic, dried oregano, salt, and pepper to the bowl and toss thoroughly to ensure even distribution of fat and seasoning.
  • Spread the seasoned vegetables in a single layer across a large rimmed baking sheet.
  • Add the sliced sausage rounds to the baking sheet, distributing them evenly among the vegetables.
  • Place the baking sheet in the center of the oven and roast for 30 to 35 minutes, using a spatula to turn the ingredients halfway through the cooking process.
  • Verify that the potatoes are fork-tender and the sausages have reached an internal temperature of 160 degrees Fahrenheit.
  • Garnish with fresh parsley and serve immediately.
