- 8 oz egg noodles or pappardelle
- 1 lb Italian sausage
- 1 bell pepper thinly sliced
- 1 onion thinly sliced
- 3 cloves garlic minced
- 1/2 cup white wine e.g., Pinot Grigio
- 1 can 14.5 oz diced tomatoes
- 1 tsp Italian seasoning
- 1/2 tsp crushed red pepper flakes optional
- Fresh basil and parsley chopped
- 1/4 cup Parmesan cheese grated
- Salt and pepper to taste
Brown the Italian sausage in a large skillet over medium-high heat. Once browned, remove from the skillet and set aside.
In the same skillet, sauté the onions, garlic, and bell peppers in the sausage drippings until softened and aromatic.
Add the white wine to the skillet, cooking until it reduces by half.
Stir in the diced tomatoes, Italian seasoning, and crushed red pepper flakes (if using). Let simmer for 5-7 minutes.
While the sauce is simmering, cook the pasta according to the package instructions until al dente. Drain the pasta and set aside.
Add the cooked pasta to the skillet, tossing to coat in the sauce. Stir in the fresh basil and parsley.
Serve the noodles topped with grated Parmesan and additional basil. Enjoy!
