Ingredients
  

  • 8 oz egg noodles or pappardelle
  • 1 lb Italian sausage
  • 1 bell pepper thinly sliced
  • 1 onion thinly sliced
  • 3 cloves garlic minced
  • 1/2 cup white wine e.g., Pinot Grigio
  • 1 can 14.5 oz diced tomatoes
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes optional
  • Fresh basil and parsley chopped
  • 1/4 cup Parmesan cheese grated
  • Salt and pepper to taste

Instructions
 

  • Brown the Italian sausage in a large skillet over medium-high heat. Once browned, remove from the skillet and set aside.
  • In the same skillet, sauté the onions, garlic, and bell peppers in the sausage drippings until softened and aromatic.
  • Add the white wine to the skillet, cooking until it reduces by half.
  • Stir in the diced tomatoes, Italian seasoning, and crushed red pepper flakes (if using). Let simmer for 5-7 minutes.
  • While the sauce is simmering, cook the pasta according to the package instructions until al dente. Drain the pasta and set aside.
  • Add the cooked pasta to the skillet, tossing to coat in the sauce. Stir in the fresh basil and parsley.
  • Serve the noodles topped with grated Parmesan and additional basil. Enjoy!
