  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 cup ricotta cheese
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • to taste powdered sugar for dusting for serving

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  • In a large bowl, mix together the ricotta, sugar, eggs, and vanilla until smooth.
  • In another bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, alternating with milk, until combined.
  • Pour the batter into the prepared pan and smooth the top.
  • Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  • Dust with powdered sugar before serving.

Notes

Store leftovers in the refrigerator in an airtight container for 3-5 days. You can also freeze individual slices for up to three months.
