- 2 pounds ground beef 90% lean
- ½ pound ground pork
- 1 cup Italian seasoned breadcrumbs
- ½ cup grated Parmesan cheese
- 1 ½ cups grated mozzarella cheese
- 1 cup Capocollo slices optional
- ½ cup fresh basil chopped
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 medium yellow onion diced
- 1 medium red pepper diced
- ½ cup scallions diced
- ¼ cup parsley chopped
- 2 large eggs
- 2 tablespoons Worcestershire sauce
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup marinara sauce plus extra for serving
Prepare the Ingredients:
Preheat the oven to 350°F (175°C).
Sauté the diced onion, red pepper, and scallions in olive oil over medium heat for 5-7 minutes until softened. Let cool.
Mix Wet Ingredients:
In a large mixing bowl, whisk eggs, Worcestershire sauce, salt, and black pepper.
Combine Ingredients:
Add the ground beef, pork, breadcrumbs, Parmesan cheese, basil, oregano, cumin, smoked paprika, sautéed vegetables, and parsley. Gently mix until combined, avoiding overmixing.
Bake:
Spread ½ cup marinara sauce over the top of the meatloaf.
