Ingredients
  

  • 2 pounds ground beef 90% lean
  • ½ pound ground pork
  • 1 cup Italian seasoned breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 ½ cups grated mozzarella cheese
  • 1 cup Capocollo slices optional
  • ½ cup fresh basil chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 medium yellow onion diced
  • 1 medium red pepper diced
  • ½ cup scallions diced
  • ¼ cup parsley chopped
  • 2 large eggs
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup marinara sauce plus extra for serving

Instructions
 

Prepare the Ingredients:

  • Preheat the oven to 350°F (175°C).
  • Sauté the diced onion, red pepper, and scallions in olive oil over medium heat for 5-7 minutes until softened. Let cool.

Mix Wet Ingredients:

  • In a large mixing bowl, whisk eggs, Worcestershire sauce, salt, and black pepper.

Combine Ingredients:

  • Add the ground beef, pork, breadcrumbs, Parmesan cheese, basil, oregano, cumin, smoked paprika, sautéed vegetables, and parsley. Gently mix until combined, avoiding overmixing.

Shape the Meatloaf:

  • Transfer the mixture to a loaf pan or baking sheet. Shape into a rectangular loaf about 9x5 inches.

Bake:

  • Spread ½ cup marinara sauce over the top of the meatloaf.
  • Bake for 55-60 minutes, or until the internal temperature reaches 160°F (71°C).

Add Mozzarella:

  • In the last 5 minutes of baking, sprinkle mozzarella cheese on top and bake until melted and bubbly.

Rest and Serve:

  • Let the meatloaf rest for 10 minutes before slicing. Serve with additional marinara sauce.
